Matcha, a popular alternative to coffee, is made from finely ground premium green tea leaves. Using high-quality matcha is essential for producing the signature bright hue and balanced umami flavor with gentle bitterness; it’s widely available online or from coffee shops that regularly prepare matcha drinks. Because the powder is delicate, using properly heated (not boiling) water helps preserve its flavor. A bamboo whisk is worth the investment, creating a smooth, lightly aerated cup that highlights matcha’s grassy complexity. Sweeten to taste with simple syrup or a flavored syrup of your choice.

Soak the bamboo matcha whisk with enough hot water to cover halfway up the tins of the whisk without covering the handle.
Sift the matcha powder into a medium bowl using a fine-mesh strainer to remove any clumps.
Whisk 2 tablespoons steaming hot water (no more than 180 degrees F) into the matcha vigorously with a bamboo matcha whisk, drawing an “M” shape until no lumps remain and the mixture is frothy on top, about 20 seconds. Set aside.
For a hot matcha latte, microwave the milk in a medium microwave-safe bowl until hot and steamy, about 90 seconds. Whisk the milk until frothy on top or froth the milk using your preferred method.
Pour the matcha base and simple syrup (if using) into a small mug and pour the frothy milk into the matcha to make any latte art.
For an iced matcha latte, pour the milk into a glass filled with ice and slowly pour the matcha base over the milk to layer it. Add simple syrup if using and enjoy immediately, stirring with a straw.
