Strain and Chill: Remove the chicken. Pour the broth through a fine-mesh sieve (ideally lined with cheesecloth) into a clean container. Chill the broth completely. Once cold, skim off the solidified fat (schmaltz).

Simmer & Swell: Cover the pot tightly and simmer for 25–30 minutes, or until doubled in size and light to the touch. They should float high. Test one to ensure the center is cooked.
Assemble and Serve: Gently remove the cooked matzah balls from the cooking water using a slotted spoon and place them directly into a fresh bowl of hot, seasoned chicken broth. Garnish with fresh dill and cooked carrots.
