One Pot Pasta for Beginners
A simple, forgiving one-pot pasta recipe ideal for beginners. Pasta cooks directly in a tomato garlic sauce, absorbing flavor as the starchy cooking liquid reduces into a silky coating.

Add olive oil to a large wide pot or deep skillet over medium heat. Add garlic slices and cook, stirring, for 1-2 minutes until fragrant and just starting to turn golden. Do not let it burn.
Add the crushed tomatoes, water (or broth), salt, pepper, oregano, and red pepper flakes. Stir to combine and bring to a boil.
Add the dry pasta to the boiling liquid. Stir immediately so the strands don't stick together, then stir every 1-2 minutes throughout cooking.
Cook uncovered over medium-high heat for 9-12 minutes (or per package directions), stirring frequently, until the pasta is al dente and has absorbed most of the liquid. The remaining liquid should look saucy, not watery.
If the liquid reduces before the pasta is done, add water 1/4 cup at a time. If the pasta is done but liquid remains, turn heat to high for 1-2 minutes to reduce.
Taste and adjust salt. Serve topped with fresh basil and Parmesan.
