Prepare your pan by lining an 8x8 or 9x9 inch baking dish with parchment paper, letting the paper overhang the sides for easy removal. Lightly grease the paper. Have your vanilla and chopped nuts measured and ready to go. This is called 'mise en place' and is critical for candy-making, where timing is everything.
In a heavy-bottomed, medium saucepan (at least 3-quart capacity), combine the butter, sugar, water, and salt. Clip a candy thermometer to the side of the pan, ensuring the tip is not touching the bottom. Cook over medium heat, stirring constantly with a heatproof spatula until the butter melts and the mixture comes to a boil.
Once boiling, stop stirring. Let the mixture cook undisturbed until it reaches 300°F (150°C) on the candy thermometer, which is the hard crack stage. This will take 10-15 minutes. The syrup will be a deep golden amber color. Trust me, the thermometer is non-negotiable for perfect toffee.
Immediately remove the pan from the heat. Carefully stir in the vanilla extract—it will bubble up vigorously. Pour the hot toffee into your prepared pan. Tip from me: Tilt the pan to help the toffee spread evenly, but don't touch it! Let it sit undisturbed for 2-3 minutes until the surface is set but still very warm.
Sprinkle the chocolate chips evenly over the hot toffee. Wait 2-3 minutes for the chocolate to soften, then use an offset spatula to spread it into a smooth, even layer. Immediately sprinkle the chopped toasted nuts over the chocolate, pressing them in gently. Let the toffee cool completely at room temperature until the chocolate is set, about 2 hours.
Once fully set, use the parchment paper to lift the toffee slab out of the pan. Place it on a cutting board. Use the tip of a sharp knife to score the chocolate, then use a meat mallet or the back of a heavy knife to crack it into rustic, bite-sized pieces.
