Preheat the oven to 300°F (150°C). Line baking sheets with parchment paper.
In a food processor, pulse almond flour and powdered sugar until combined. Sift the mixture into a large bowl.
In a separate bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar and continue to beat until stiff peaks form.
Gently fold the almond flour mixture into the egg white mixture until smooth. Add food coloring, if desired.
Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets.
Tap the baking sheets on the counter to release air bubbles. Let the macarons sit at room temperature for 30 minutes.
Bake for 18-20 minutes, until the macarons are set and lightly crisp. Let cool completely before filling and serving.
