Preheat your air fryer to 375°F (190°C).
Wash and peel the potatoes, then cut them into evenly sized fries (about ¼ inch thick).
Place the cut potatoes in a large bowl and drizzle with olive oil. Toss the fries to coat evenly.
Sprinkle the garlic powder, onion powder, paprika, salt, and pepper over the potatoes. Toss again to ensure the seasoning is evenly distributed.
Place the seasoned fries in the air fryer basket in a single layer. Cook at 375°F (190°C) for 18-20 minutes, shaking the basket halfway through.
Once the fries are golden and crispy, remove them from the air fryer and garnish with freshly chopped parsley if desired.
