To make Tomato, Mozzarella & Pesto Sandwich: Place toasted focaccia slices on a cutting board. Spread 1½ teaspoons pesto on 4 focaccia slices. Top each with 1 slice meat and 1 slice mozzarella. Top evenly with sliced tomatoes. Drizzle each with 1 teaspoon balsamic glaze. Top each with a remaining focaccia slice. Cut in half and serve.
To make Fig & Goat Cheese Sandwich: Place toasted focaccia slices on a cutting board. Divide 3 ounces goat cheese among 4 focaccia slices; spread to cover. Top each with 1½ teaspoons fig jam. Top each with 1 slice meat and ¼ cup arugula. Drizzle each with ½ teaspoon balsamic glaze. Top each with a remaining focaccia slice. Cut in half and serve.
