Berry Crisp

Preheat your oven to 375°F (190°C) and lightly grease a 9×9 inch baking dish.
In a large bowl, toss the mixed berries with sugar, cornstarch, lemon juice, and vanilla extract until evenly coated.
Pour the berry mixture into the prepared baking dish and spread evenly.
In another bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add cold diced butter and use fingers or pastry cutter to mix until coarse crumbs form.
Sprinkle the crumble topping over the berries evenly.
Bake for 35–40 minutes until the top is golden and the berries are bubbling around the edges.
