Prepare the Mangoes: Peel and cut the mangoes into small, bite-sized chunks. For a delightful texture, be sure to leave some mango pieces slightly chunky. Set them aside in a bowl.
Sauté Onions: In a medium saucepan, heat a splash of oil over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 5 minutes. For the best results, keep an eye on them so they don’t brown too much.
Add Aromatics: Stir in the minced garlic and grated ginger, cooking for 1 additional minute or until fragrant. This is where your kitchen begins to smell divine!
Spice It Up: Add the chili flakes, cinnamon, cumin, cloves, and salt to the pan. Stir for 1 minute to toast the spices, enhancing their flavors. Then pour in the apple cider vinegar and stir to combine.
Combine All Ingredients: Now, gently fold in the diced mangoes, brown sugar, and golden raisins (if using). Stir everything together, then bring it to a boil. Don’t worry if it looks too chunky at this stage; the simmering will work its magic!
Simmer to Perfection: Reduce the heat to low and let your chutney simmer uncovered for 40 to 50 minutes. Stir occasionally to prevent sticking, and watch as it thickens to a glossy, jam-like consistency. You’ll know it’s done when it coats the back of a spoon thickly.
Cool and Store: Once ready, remove the chutney from heat and let it cool for about 10 to 15 minutes. Spoon the warm chutney into sterilized jars, seal them tightly, and store in the refrigerator for up to a month (if it lasts that long!).
Use ripe mangoes for the best sweetness.
Monitor the mixture closely towards the end of cooking to avoid burning.
If it becomes too thick, add a splash of water or vinegar to adjust consistency.
