Seed and mince 1 jalapeño.
Crack 6 eggs into a bowl, add a pinch of salt and pepper, and beat lightly.
Heat 2 tablespoons oil in a large skillet over medium-high heat.
Add tortilla strips in a single layer and fry for 2-3 minutes, stirring occasionally, until golden and crispy.
Transfer to a paper towel-lined plate and set aside.
