1. Preheat oven to 425°F (218°C). Lightly spray a 9x13-inch baking dish with nonstick spray.
2. Place cod fillets evenly in dish. Use fresh or frozen fillets (thaw preferred but not required).
3. In a small bowl, mix melted butter, lemon juice, garlic, salt, and red pepper flakes.
4. Add in capers and stir.
5. Spoon sauce over each fillet, brushing evenly.
6. Sprinkle paprika, more salt and white pepper on top of each fillet.
7. Bake uncovered for 15 minutes (or 25 minutes if using frozen), until fish flakes easily and turns opaque. Internal temperature should read 145°F.
