Heat the large pot over medium-high heat. Add the sausage, breaking it up with a spoon. Cook until fully browned. Drain off all but about 1 tablespoon of rendered fat.
Reduce heat to medium. Add the diced onion to the pot with the sausage fat. Sauté until softened and translucent (about 5 minutes). Add minced garlic and cook for 1 minute until fragrant.
Add the thinly sliced potatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring the mixture to a boil, then reduce heat to maintain a gentle simmer. Cover and cook for 15–20 minutes, or until potatoes are fork-tender.
