Prep and Pound the Chicken: Slice each chicken breast horizontally to create 8 thinner cutlets. Place the cutlets between two sheets of plastic wrap. Using a meat mallet, gently pound the chicken to a uniform thickness of about 1/4 inch (6 mm). Season both sides of the pounded chicken heavily with salt and pepper. Place the flour in a shallow dish, dredge each piece of chicken in the flour, shaking off all excess.
Sear the Chicken: Add the oil and 1 Tbsp of butter to a large skillet over medium-high heat. Once shimmering, place 2-3 pieces of chicken in the pan, ensuring they do not touch. Cook for 2–3 minutes per side until deeply golden brown and cooked through (Internal temperature should reach 165°F / 74°C). Remove the seared chicken to a clean plate and cover loosely with foil. Repeat with remaining chicken.
