<p>Gently rinse the strawberries and dry on paper towels (berries must be completely dry). Line a cookie sheet with waxed paper or parchment paper.</p>
<p>In a 1-quart saucepan, melt the chocolate chips and shortening over low heat, stirring frequently. Remove from the heat.</p>
<p>Dip the lower half of each strawberry into the chocolate mixture; allow excess to drip back into the saucepan. Place the dipped strawberries on the lined cookie sheet. Place in the refrigerator.</p>
<p>Refrigerate uncovered for about 30 minutes or until chocolate is firm. Store covered in the refrigerator so chocolate does not soften (if made with oil, chocolate will soften more quickly at room temperature).</p>
