Instructions
Combine flour, salt, yeast, and sugar in a large bowl and whisk to combine.
Add room temperature water and knead for 2 minutes until a shaggy dough forms.
Cover and rest for 20 minutes.
Knead again for 2-3 minutes until smooth.
Cover and ferment at room temperature for 4-6 hours, up to 12 hours max.
Divide into 3 equal balls (287g each), shape tight, cover and rest 3 hours.
Stretch, top, and bake on a preheated Baking Steel at 500°F for 5-7 minutes.
