Whisk together flour, sugar, yeast, salt, and anise seeds (if using) in a large bowl.
In a medium bowl, whisk yogurt, olive oil, and warm water. Add to dry ingredients and mix with a fork. Knead gently into a soft, slightly sticky dough, adding flour if needed.
Lightly oil a clean bowl. Transfer dough to the bowl, cover, and let rise in a warm place for 1 to 1½ hours, or until doubled in size.
Dust a work surface with flour. Shape the dough into a long rectangle and cut into 6 equal portions, dusting with more flour as needed. Roll each portion in flour.
Warm a large cast iron or nonstick pan over medium-high heat. Roll one dough ball into an oval shape (⅛-inch thick). Cook until the top is bursting with air bubbles and the bottom is golden and blackened in spots. Flip and cook for 1-2 minutes more.
Remove from skillet and brush with melted butter. Place in a tea towel-lined dish to keep warm. Repeat with remaining naans, adjusting heat as needed. Sprinkle with parsley, if using, and serve warm.
To keep warm, place cooked naan in a 200°F oven. Store leftovers in a Ziplock bag and reheat in a 350°F oven wrapped in foil.
