Drain and set aside
Make the sauce: In a bowl, mix soy sauce, oyster sauce, hoisin sauce, brown sugar, and cornstarch slurry
Set aside
Stir-fry beef: Heat 1 tbsp oil in a large skillet or wok over medium-high heat
Add beef and cook until browned, about 3–4 minutes
Remove and set aside
Stir-fry vegetables: Add remaining oil to the pan
Sauté garlic, ginger, bell pepper, and snap peas for 3–4 minutes until tender-crisp
Combine: Return beef to the pan, add cooked noodles and sauce
