This rich and creamy dairy-free Alfredo sauce is made with coconut milk and cashew cream, delivering a luxurious texture and authentic flavor without any dairy. Boil cashews for 5–10 minutes until soft. Drain, then blend with 3/4 cup water or plant milk until smooth. Set aside.
Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
Heat olive oil in skillet over medium. Add garlic and sauté 30 seconds until fragrant but not browned.
Add flour and whisk constantly to form a smooth paste (roux). Cook 1 minute to remove raw taste.
Gradually whisk in broth, then coconut milk and cashew cream. Whisk constantly for a smooth texture.
Stir in salt, pepper, and nutritional yeast. Simmer 2–3 minutes until it thickens and coats a spoon.
Add cooked pasta and reserved pasta water to the sauce. Toss well to coat. Adjust texture with more pasta water if needed.
