In a large mixing bowl, combine drained whole kernel corn, creamed corn, sour cream, melted butter, and eggs. Stir until well combined.
Add corn muffin mix, salt, and pepper to the bowl. Gently fold together until just incorporated—do not overmix. A few lumps are okay.
Reserve 1/4 cup of shredded cheddar cheese for topping, then fold the remaining cheese into the corn mixture.
Pour mixture into the prepared baking dish and spread evenly. Sprinkle reserved cheese over the top.
Bake for 45-55 minutes, until the top is golden brown and the center is set (should jiggle slightly but not look liquidy).
