Instructions
In a large bowl, combine the masa harina and 1 cup of water. Mix with your hands or a spoon until a soft, pliable dough forms. If the dough is too dry, gradually add more water, one tablespoon at a time, until the desired consistency is reached.
Divide the dough into 4 equal portions and shape each portion into an oval-shaped disk, roughly 1/2 inch thick.
Heat a skillet or griddle over medium heat. Cook each masa disk for about 2-3 minutes on each side, until lightly browned and cooked through.
In a separate frying pan, heat the vegetable oil over medium heat. Carefully fry the masa disks one at a time until they puff up and become crispy, about 2 minutes per side. Drain on paper towels to remove excess oil.
Spread a generous layer of refried beans on each huarache.
Top with your choice of cooked meat, followed by crumbled cheese, shredded lettuce, diced tomatoes, diced onion, chopped cilantro, and avocado slices.
Season with salt to taste and serve with lime wedges on the side for an extra burst of flavor.
