Preheat oven to 425°F with a rack in lower third position. Gather all ingredients.
Whisk together lemon zest and juice, broth, oil, oregano, garlic, salt, and pepper in a small bowl until combined. Place potatoes on a large rimmed baking sheet, and toss with lemon mixture until evenly coated; arrange in an even layer.
Roast in preheated oven until potatoes are just tender and liquid is mostly absorbed, about 30 to 40 minutes. Stir potatoes and continue cooking until potatoes are browned and slightly crisp, about 10 to 15 minutes more. Season with salt to taste and garnish with parsley. Serve with lemon wedges.
