Cacio e Pepe

Bring water and salt to a boil in a large saucepan over high. Add pasta, gently stirring to submerge pasta in water; cook, stirring occasionally, according to package directions for al dente.

While pasta is cooking, heat olive oil in a small skillet over medium-low. Add pepper; cook, stirring occasionally, until fragrant and gently sizzling, about 1 minute. Transfer oil and pepper mixture to a very large bowl.

Drain pasta in a colander, reserving 1 1/2 cups of cooking water. Set pasta and cooking water aside to cool slightly, about 3 minutes.

Stir cheeses into pepper mixture in bowl. Gradually whisk in about 1 cup of the cooking water, whisking constantly, until cheese is completely melted and mixture is emulsified. Add drained pasta; toss vigorously to coat evenly, adding remaining 1/2 cup cooking water as needed to loosen into a glossy sauce that clings to the pasta. Serve topped with additional grated Pecorino and cracked black pepper.
