Preheat your oven to 350°F (175°C). Lightly spray a 9 x 13-inch baking dish with cooking spray to prevent sticking.
In a large bowl, whisk together condensed cream of mushroom soup, beef broth, uncooked rice, garlic powder, dried chives, and onion powder until smooth. Pour this mixture evenly into the prepared baking dish.
Pat the pork chops dry with paper towels for even cooking. Place them on top of the rice mixture spaced evenly in the baking dish.
Sprinkle the Lipton Onion Soup & Dip Mix evenly over the pork chops. For a milder flavor or reduced salt, use half the packet.
Cover the dish tightly with aluminum foil to retain moisture. Bake in the preheated oven for about 30 minutes. Check the pork chops’ internal temperature; it should reach 145°F (63°C). If done, remove pork chops from casserole, cover with foil, and let rest.
Stir the rice mixture to combine the flavors. Re-cover the baking dish and bake for an additional 25-30 minutes, or until the rice is tender and liquid is mostly absorbed.
Fluff the rice gently with a fork. Serve the rice alongside the rested pork chops. Garnish with fresh parsley or basil if desired.
