Cut tomatoes in 3rds and using a spoon scoop out the seeds. Cut into rough chunks. Crush 1 clove of garlic. Mix tomatoes, crushed garlic, 2 tablespoons of olive oil, basil, salt and pepper and set aside for 5-10 minutes to infuse.
Bake, toast or grill bread until nicely toasted on both sides. Be careful not to burn them. Cut the other piece of garlic in half and take one half and rub it over the surface of the toasted bread slice while it is hot until it is lightly covered. Use one half for two slices of bread.
Using a pastry brush, brush each slice of toasted bread with the remaining tablespoon of olive. Scoop a portion of the tomato mixture on top of each bread slice, making sure to cover the entire surface.
