Heat your oven to 400°F while you arrange 13 ounces of tortilla chips across a rimmed sheet pan in a single, even layer.
Distribute the warm beef and bean mixture over your tortilla chips, then sprinkle 2 cups of shredded cheddar and Monterey Jack cheese across the top, adding pickled jalapeños if that’s your preference.
Place the sheet pan in the 400°F oven for 10-15 minutes until the cheese melts completely and the chip edges turn golden brown.
