In a medium bowl, whisk together the sifted all-purpose flour, unsalted butter (ensure it’s softened but not melted), granulated sugar, vanilla extract, and salt. Using your fingertips or a pastry blender, work the ingredients together until the mixture resembles coarse crumbs. It should feel slightly sandy, and when you press a bit between your fingers, it should start to clump together. This is the foundation of your perfect shortbread.
Divide the dough mixture into two approximately equal portions. Place one portion into a separate bowl.
To the dough remaining in the first bowl, add the cinnamon, nutmeg, and pinch of cloves. Mix well until the spices are evenly incorporated. This will be your spiced shortbread base.
To the second portion of dough, add the unsweetened cocoa powder and milk. Mix until a smooth, chocolate dough forms. If the chocolate dough seems too dry, add another tiny splash of milk; if too wet, a whisper of flour.
Wrap both dough portions tightly in plastic wrap and flatten them into discs. Refrigerate for at least 30 minutes. This chilling period is crucial for developing a tender, non-spread cookie and for making the dough easier to marble without overmixing.
Remove the doughs from the refrigerator. On a lightly floured surface, roll out the spiced dough into a rectangle approximately 1/4 inch thick. Do the same with the chocolate dough. Carefully place the chocolate rectangle on top of the spiced rectangle. Gently press them together. Now, it’s time for the artistry! Roll the layered dough up from one of the longer sides, like a jelly roll, trying to keep it firm and even. As you roll, you can gently stretch the dough if needed to ensure a tight spiral.
Once rolled, you can gently shape the log into a more uniform cylinder if desired. Wrap the log tightly in plastic wrap and refrigerate again for another 15-30 minutes, or until firm enough to slice cleanly. This second chill ensures the swirls hold their shape beautifully during baking.
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Slice the chilled dough log into 1/4-inch thick rounds using a sharp knife. Arrange the slices on the prepared baking sheets, leaving about an inch between them.
Bake for 20-25 minutes, or until the edges are lightly golden and the centers look set. Avoid over-baking, as shortbread should remain pale and crumbly.
