Beef pho is a classic Vietnamese noodle soup made with rice noodles in a clear, slow-simmered beef broth flavoured with star anise and cinnamon. Thin slices of beef are added just before serving and cooked in the hot stock. It is topped with fresh herbs, beansprouts, lime and chilli, allowing you to adjust the flavour to your taste. Light but filling, it is a straightforward, comforting dish that works well for lunch or dinner.
