In a medium saucepan, heat sugar + liquid over medium, stirring until the sugar fully dissolves.
Add cranberries; bring to a gentle boil. Reduce to medium-low and simmer 10–15 minutes, stirring occasionally.
Cook until most berries pop and the sauce thickens enough to coat the back of a spoon.
Remove from heat. Stir in orange zest, vanilla, and a pinch of salt. Cool completely — it thickens as it chills.
Refrigerate up to 7 days or freeze up to 2 months. Serve with turkey, ham, or over baked brie!
