Scratch Waffles

First, measure out all your ingredients for the best waffles.
Then, take a good sized mixing bowl and whisk together your dry ingredients: flour, sugar, baking powder and baking soda. This step is crucial to ensure everything is evenly distributed throughout the batter.
Next, in a separate bowl, lightly beat your eggs. Then add the buttermilk and melted butter to the mix. Stir gently until the mixture is smooth and well combined.
Now, combine the wet and dry ingredients. Pour the buttermilk mixture into the bowl with the dry ingredients and gently stir it until it’s just combined. Don’t overmix—a few lumps are totally fine and overmixing can make the waffles tough and chewy.
Let the batter rest for about 10 minutes. This gives the flour time to relax and allows the baking powder and baking soda to do their leavening magic. You’ll notice the batter may start to bubble a bit, which means your waffles are going to come out perfectly!
While the batter is resting, prepare your waffle iron. Make sure it’s preheated and ready to go. If you’re using a waffle maker with adjustable heat, set it to medium-high, then lightly grease the waffle plates with cooking spray or a bit of butter to keep your waffles from sticking.
Once the batter is ready and your waffle maker is hot, use a ladle or a measuring cup (Using my BLACK+DECKER Belgian-style waffle maker, I used ¾ cup of batter per waffle)
Close the waffle maker and cook until the waffles are golden and crispy—this usually takes about 3 to 5 minutes, depending on your waffle iron. If your waffle maker has an indicator light, wait for that to go off or for steam to slow down.
Once the waffles are done, carefully remove them from the waffle iron. Transfer them to a serving platter and repeat the process with the remaining batter.
