Step 1: Prepare the Chicken
Pat the chicken breasts dry with a paper towel. Season both sides with salt, black pepper, garlic powder, and smoked paprika.
Step 2: Sear the Chicken
Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and sear for 5-6 minutes per side until golden brown. Remove from the skillet and set aside (it will finish cooking in the sauce).
Step 3: Sauté the Garlic and Sun-Dried Tomatoes
In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Stir in the sun-dried tomatoes and cook for another 1-2 minutes.
Step 4: Make the Creamy Sauce
Pour in the chicken broth to deglaze the pan, scraping up any browned bits (this adds tons of flavor). Reduce the heat to medium-low, then stir in the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Let the sauce simmer for 2-3 minutes until it thickens slightly.
Step 5: Add Spinach and Return Chicken to the Pan
Stir in the chopped spinach and let it wilt for about 30 seconds. Return the chicken breasts to the skillet, spooning some sauce over the top. Simmer for 5 more minutes, or until the chicken is fully cooked (internal temperature 165°F).
Step 6: Garnish and Serve
Remove from heat and garnish with fresh basil or parsley and extra Parmesan cheese. Serve warm over pasta, rice, mashed potatoes, or sautéed vegetables.
