Prepare the Chicken:
Thinly slice the chicken breasts and season them with salt and pepper.
Cook the Chicken:
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
Cook the Vegetables:
In the same skillet, heat the remaining tablespoon of olive oil. Add the garlic, onion, and red pepper flakes (if using), and sauté for 2 minutes until fragrant.
Add the cabbage and stir-fry for 5-6 minutes, until the cabbage is tender but still crisp.
