Ingredients
Instructions
Preheat the oven: Set your oven to 350°F (175°C) to ensure it’s hot and ready for baking your cake.
Prepare the baking pan: Grease and flour an 8-inch round cake pan, ensuring that the cake will easily release after baking.
Mix the dry ingredients: In a bowl, whisk together the sifted flour, baking powder, and salt until well combined, setting it aside for later use.
Cream the butter and sugar: In a separate mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy, which should take about 3-5 minutes.
Add the eggs: Crack in the two large eggs, one at a time, mixing well after each addition to ensure they are fully incorporated into the batter.
Incorporate the vanilla: Pour in the vanilla extract and mix until combined, adding a delightful flavor to your cake batter.
Combine wet and dry ingredients: Gradually add the dry flour mixture to the creamed butter and sugar, mixing until just combined; be careful not to overmix.
Pour the batter into the pan: Transfer the prepared batter into the greased cake pan, smoothing the top with a spatula for an even surface.
Bake the cake: Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cake: Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Whip the cream: In a mixing bowl, combine the heavy cream and powdered sugar, then whip until soft peaks form, creating a fluffy frosting.
Assemble the cake: Once the cake is completely cooled, slice it in half horizontally to create two layers; spread a layer of whipped cream on the bottom layer.
Add the berries: Top the whipped cream layer with sliced strawberries, blueberries, and raspberries, then gently place the second cake layer on top.
Frost the cake: Use the remaining whipped cream to frost the top and sides of the cake, creating a beautiful and festive appearance.
Decorate: Finish by sprinkling red, white, and blue sprinkles on top and drizzling melted white chocolate for an extra touch of decoration.
