Cornbread
Preheat oven to 400 F.
Whisk together the dry ingredients. Set aside.
In a separate bowl, whisk wet ingredients. Stir in the corn.
Combine wet and dry ingredients.
Pour into a greased baking sheet and bake for 20-25 minutes, until fully set. Let it cool completely.
Break cornbread into crumbles. Place on a baking sheet and bake for 10 minutes.
Cornbread Dressing
Reduce oven heat to 350 F.
Heat skillet with 1 tablespoon of olive oil. Add onions, garlic, carrots and celery. Sauté for 5 minutes.
Stir in the poultry seasoning.
Add the vegetables to a baking dish, along with the cornbread croutons, dried fruit and pecans. Pour chicken broth over the mixture.
