Smooth, protein-packed dessert with cottage cheese, honey, and vanilla. Easy to make and totally customizable.

Ingredients
Instructions
In a high-powered blender or food processor, combine the cottage cheese, heavy cream (or milk), honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until the mixture is completely smooth with no lumps. Taste the mixture and adjust sweetness if necessary.
Pour the mixture into a bowl and cover it. Refrigerate for at least 1-2 hours to chill the base before freezing.
If you’re using an ice cream maker, follow the manufacturer’s instructions. Pour the chilled mixture into the ice cream maker and churn for about 20-25 minutes, or until it reaches a soft-serve consistency.
If you’re not using an ice cream maker, pour the mixture into a freezer-safe container. Place it in the freezer and stir every 30 minutes for the first few hours to break up any ice crystals. This will help ensure a smooth texture.
Once the ice cream has reached the desired consistency, transfer it to an airtight container and freeze for 2-3 more hours, or until firm.
Scoop and serve your cottage cheese ice cream with toppings of your choice, such as fresh fruit, chocolate drizzle, or nuts.
