Season the Rice:In a small bowl, mix rice vinegar, sugar, and salt. Stir until dissolved, then gently fold into the warm rice. Let it cool to room temperature before using.
Prepare the Nori Sheets:Preheat your oven to 300°F (150°C). Lay out the nori sheets on a baking tray and warm them for 1–2 minutes. This helps make them easier to roll and crisp in texture.
Set Up Your Work Station:Place a bamboo sushi mat on your surface and cover it with plastic wrap. Lay one sheet of nori, shiny side down. Keep a small bowl of water nearby to wet your hands while handling rice.
Spread the Rice:Take a handful of cooled sushi rice and gently spread it over the nori, leaving a small border (about ½ inch) at the top for sealing.
