Transfer wings into a large sealable plastic bag or shallow container. Coat the wings generously with about half of the prepared sauce. Seal and marinate in the refrigerator overnight for maximum flavor infusion.
Preheat your gas grill to medium-high heat. Prepare a smoking packet by wrapping wood chips in heavy-duty aluminum foil, piercing several holes for smoke ventilation. Place the packet on the grill and allow it to smolder for 5 minutes.
