These classic Whoopie Pies combine two soft chocolate cakes sandwiched around a sweet, fluffy vanilla filling, perfect for celebrations or just indulging your inner child.

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. In another bowl, beat the butter and brown sugar until fluffy, then add the egg and vanilla. Slowly incorporate the dry ingredients with the buttermilk.
Drop spoonfuls of batter onto the prepared sheets, leaving some space between them, and smooth the tops.
Bake for 10–12 minutes until the tops spring back when touched. Allow to cool completely before filling.
For the filling, beat the butter until creamy, then mix in the powdered sugar, marshmallow fluff, and vanilla until smooth.
Spread a dollop of filling on one cake and top with another to make a sandwich. Press gently.
Refrigerate for 30 minutes for the perfect texture, then serve with a glass of milk or coffee!
