Hailing from Mexico, agua fresca is a light and refreshing fruit drink prepared by blending fresh fruit with water and sweetener. It’s adaptable to just about any juicy ripe fruit (or a combination of fruits) you’d like to incorporate and is an excellent way to make use of extra fruit you have on hand.

Combine the fruit, water, honey, mint and lime juice and zest in a blender and blend until smooth. If needed, add more water to move things in the blender. Strain through a mesh strainer into a pitcher and discard the solids. This will remove excess pulp. Taste and add more sweetener if needed
Serve the agua fresca over ice. The juice may begin to separate after time, but it can be stirred again before serving. Refrigerate any leftover agua fresca for up to 3 days.
