Ingredients
Instructions
In a 9×13-inch baking dish, whisk together the full-fat coconut milk, low sodium chicken broth, red curry paste, peanut butter, grated garlic, grated ginger, soy sauce, fish sauce, honey, lime juice, and sesame oil until the mixture is smooth and well combined.
Stir in the packed spinach and sliced mushrooms, ensuring they are evenly coated with the sauce throughout the dish.
Place the frozen potstickers or gyozas directly into the sauce in a single layer, making sure none overlap; spoon some of the sauce over the dumplings to coat their tops.
Cover the baking dish tightly with aluminum foil and bake in a preheated oven at 375°F (190°C) for 27–32 minutes, until the dumplings are heated through and tender.
Remove the foil for the final 5 minutes of baking to allow the dumplings to become extra crispy on top.
Once out of the oven, sprinkle with chopped green onions and sesame seeds, drizzle with chili oil, and serve hot alongside steamed white rice.
