Weigh the dough and divide into even pieces so the braid bakes uniformly. Roll each piece into a long strand about 1½ times the length of your bread pan. If the dough resists stretching, let it rest 5 minutes, then try again. Lay the three strands side by side, braid, and pinch the ends to seal. Tuck the ends underneath for a neat loaf. Line a 5" × 9" (13 × 23 cm) non-stick bread pan with parchment, letting the sides overhang so you can lift the loaf out easily. Nestle the braid inside. Cover loosely with plastic wrap and proof at 75–90°F (24–32°C) for 60–90 minutes, or until almost doubled. Readiness test: press a finger gently into the dough—if the dent springs back halfway, it is ready. If it snaps back fully, give it more time. The surface should look clearly puffed when it is done.
