This homemade peach cobbler is loaded with juicy, spiced peaches and topped with a buttery, brown sugar crust that bakes up perfectly golden and crisp. It’s the ultimate from-scratch comfort dessert—easy to make and even better with a scoop of vanilla ice cream.

Preheat oven to 350°F (175°C). Grease or butter a 9x13-inch (23x33cm) pan.
Peach Filling
In a large saucepan, combine all the peach filling ingredients: peaches, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cornstarch, vanilla, lemon juice, salt, and 2 tbsp butter.
Cook over medium heat for 5–8 minutes until the juices reduce and become syrupy. Remove from heat and set aside.
Make the Batter
In a mixing bowl, whisk together flour, both sugars, baking powder, and salt.
Add milk, vanilla, and melted butter. Stir until just combined — batter should be thick but pourable.
Assemble the Cobbler
Pour the peach filling evenly into the prepared baking dish.
Spoon or pour batter evenly over the top, spreading gently. Leave some areas of filling peeking through — do not stir.
Sprinkle generously with turbinado sugar and then a sprinkle of cinnamon
Bake for 40–45 minutes, or until puffed, golden and bubbly. A toothpick should come out clcean.
Let sit for 10–15 minutes so the filling thickens. Serve warm with vanilla ice cream.
