Cook the pasta in salted boiling water according to package instructions until al dente. Drain and reserve a small amount of pasta water before setting the pasta aside.
Pat the chicken breasts dry and coat both sides generously with Cajun seasoning. Heat olive oil or butter in a skillet over medium-high heat. Cook the chicken for 5-6 minutes per side until browned and cooked through. Remove chicken and let it rest.
Using the same skillet, add sliced bell peppers, onions, and minced garlic. Sauté for 4-5 minutes until softened and fragrant, scraping any browned bits from the chicken for extra flavor.
