Slice each medium zucchini in half lengthwise and, using a spoon or melon baller, scoop out the flesh leaving a 1/4" thick shell. Collect the scooped flesh and chop it into small, uniform pieces; set the chopped flesh aside for the filling.
### Step 3: Blanch the zucchini shells briefly
Drop the hollowed zucchini halves into the boiling water for about one minute to slightly soften the flesh so they collapse less in the oven. Remove them promptly and let them drain and cool cut-side up on the limestone slab.
### Step 4: Prepare the baking dish
Pour 1/4 cup of the quick marinara sauce into the bottom of a 9 x 12" rectangular baking dish, spreading it thinly so the zucchini won’t stick. Arrange the blanched zucchini halves cut-side up in the dish, evenly spaced to accept filling later.
### Step 5: Brown the sausage

### Step 8: Fill the zucchini shells
