Prepare the Brisket
Trim excess fat from the brisket, leaving about 1/4 inch for flavor.
Mix all rub ingredients together and generously coat the brisket on all sides.
Wrap the brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Smoke the Brisket
Preheat your smoker to 225°F (107°C).
Place the brisket in the smoker and cook for about 6 hours, or until it reaches an internal temperature of 195°F (90°C).
Remove the brisket from the smoker and let it rest for 30 minutes.
Cut and Sauce
Cut the brisket into 1-inch cubes.
Toss the cubes in a mixture of barbecue sauce and honey.
Return the cubes to the smoker for an additional 30 minutes to caramelize.
Serve
Serve the burnt ends hot with additional barbecue sauce on the side.
