Season the thinly sliced chicken breasts with salt and pepper.
Mix together the soy sauce, oyster sauce, rice vinegar, cornstarch, chicken broth and honey in a small bowl until smooth.
Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat then add the chicken, cooking it until its nicely browned, about 4-5 minutes. Remove the chicken from the pan.
Add the remaining 1 tbsp vegetable oil to the same pan and toss in the minced garlic and grated ginger. Stir them around for about 30 seconds till fragrant.
Add the sliced onion, red bell pepper, and green bell pepper to the pan. Stir fry for about 2 minutes until they start to soften.
Add the broccoli florets and julienned carrot then continue to stir fry for another 2 minutes so all the veggies are crisp but tender.
Return the browned chicken to the pan and pour the mixed sauce over everything, stirring continuously so that the sauce evenly coats the chicken and vegetables.
Let the sauce simmer for a couple minutes until it thickens up nicely.
If you like it a bit spicy, toss in red chili flakes to taste.
Serve the delicious chicken stir fry over cooked rice and enjoy your speedy weeknight meal!
