Remove the roast from the fridge an hour before cooking to allow it to come to room temperature.
Preheat your oven to 500°F (260°C).
Generously season the roast with salt, pepper, and herbs, rubbing them all over the meat.
Place the roast bone-side down in the roasting pan and insert the meat thermometer into the thickest part of the meat.
Roast the meat for 15 minutes at 500°F (260°C).
Lower the oven temperature to 325°F (163°C) and continue roasting until the thermometer registers 120-125°F (49-52°C) for rare.
Once cooked, let the roast rest covered in foil for 20-30 minutes before carving.
