Cook the Chicken: Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
Heat the olive oil in a large skillet over medium heat. Cook the chicken breasts for 5-6 minutes per side, or until fully cooked (internal temperature of 165°F/75°C). Remove from the pan and set aside to rest before slicing into strips or cubes.
Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine (or linguine) according to package instructions until al dente. Drain, reserving about 1 cup of pasta water for the sauce, and set aside.
Prepare the Alfredo Sauce: In the same skillet you used to cook the chicken, melt the butter over medium heat.
Add the minced garlic and sauté for 1-2 minutes until fragrant.
Stir in the heavy cream and bring it to a simmer.
