Begin by heating olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-5 minutes until translucent.
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Incorporate the ground turkey into the skillet and use a spatula to break it into smaller pieces. Cook until browned and no longer pink, approximately 5-7 minutes.
Add the diced bell pepper, zucchini, and sliced mushrooms to the skillet. Stir well to combine and cook for another 5-7 minutes until the vegetables are tender.
Stir in the corn, oregano, smoked paprika, salt, and pepper. Cook for an additional 3 minutes, allowing the flavors to meld.
Reduce the heat to low, and stir in the chopped spinach, cooking just until wilted, about 1-2 minutes.
If desired, sprinkle shredded cheese over the top of the mixture, cover the skillet, and let it sit for 2-3 minutes until the cheese is melted.
