Roast the peanuts: Heat a non-stick pan over medium heat. Add the peanuts and roast them for 5-6 minutes or until they turn golden brown. Keep stirring the peanuts to avoid burning them. Once done, remove them from the pan and let them cool down.
Prepare the jaggery syrup: In the same pan, add the jaggery and water. Stir until the jaggery dissolves completely. Turn the heat to low and let the syrup cook for 4-5 minutes. Check the consistency of the syrup by dropping a little bit of it in a bowl of water. If it forms a hard ball, the syrup is ready.
Add the cardamom powder and ghee: Once the syrup is ready, add the cardamom powder and ghee to it. Mix well until the ghee melts and gets incorporated into the syrup.
Add the roasted peanuts: Add the roasted peanuts to the syrup and mix well. Make sure that all the peanuts are coated evenly with the syrup.
Set the mixture in a greased plate: Grease a plate with some ghee and pour the peanut mixture onto it. Use a spatula to spread the mixture evenly in the plate.
Cut into pieces: Let the peanut gachak cool down for 10-15 minutes. Once it has cooled down a bit, use a sharp knife to cut it into desired pieces.
