Preheat the oven to 375°F (190°C) and grease a 9x13 inch or similar oval baking dish with a little butter.
Toss the potato slices in a bowl with 1 tablespoon olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper, spread half the potatoes in an even layer in the bottom of the dish.
In a skillet over medium heat add 1 tablespoon olive oil and 1 tablespoon butter, cook the onion until softened about 5 minutes then add garlic and cook 30 seconds more.
Add the chicken pieces to the skillet, season with thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper, cook until just browned on the outside about 4 minutes but not fully cooked through.
Layer the cooked chicken and onion mixture over the potatoes, sprinkle half the cheese over the top, then layer the remaining potato slices evenly.
Whisk together the chicken broth and milk, pour evenly over the layered casserole so it settles between the potatoes and chicken.
Dot the top with remaining butter, sprinkle the remaining cheese and breadcrumbs evenly over the top.
Cover the dish tightly with foil and bake for 35 minutes, remove the foil and bake another 20 to 25 minutes until potatoes are tender and top is golden brown.
Let the casserole rest 10 minutes before sprinkling with chopped parsley and serving.
